I FAILED MAKING BANANA BREAD & HOW I SAVED IT...

While we were are on “stay at home” orders to quarantine at home during the Corona Virus (COVID 19) pandemic… It seems like everyone is making Banana Bread (which is one of my favorites to eat!). Like many people, I have let my healthy eating go a bit out the window so I thought I would try making a healthier banana bread by not adding any sugar to it, if possible.

Recipe

  • 1 3/4 cups flour 

  • 1/3 cup sugar *I skipped this step to avoid adding excess sugar

  • 2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • pinch of mineral salt

  • 1/3 cup oil *I used avocado oil

  • 1 teaspoon vanilla extract

  • 4 small or 3 large overripe bananas (about 1 1/2 – 1 3/4 cups), mashed

  • 1/4 cup milk

  • my mistake… adding a bunch of pure 100% dark cacoa chocolate chip unsweetened

how i failed…

The bread baked beautifully. It was moist… but those chocolate chips were soooooo bitter and not having any sugar with the super bitter chocolate made it practically inedible. However, I didn’t want to waste food!

how I saved it…

I added some butter and drizzled some creamy peanut butter I warmed up. Yum!

Another option I did was make an icing using a splash of milk and confectioners sugar (powdered sugar).

The lesson

Not everything goes as planned in life or in the kitchen.
The ability to not give up and get creative normally helps in most cases.
